My Daybook . . . #1



FOR TODAY... Monday, July 21, 2008


Outside My Window... The birds are eating their breakfast.

I am thinking... I had a great walk/run this mourning. I need to do it everyday.

I am thankful for... My Husband (It's his birthday this week and he is on my heart!), great friends. We had such an enjoyable time yesterday afternoon with another family. Looking forward to spend more time with them in the future.

From the kitchen... Marinated Cheese (I made this yesterday and it was a hit.) Easy!

INGREDIENTS
1/2 cup olive oil
1/2 cup white wine vinegar
1 (2 ounce) bottle diced pimento, drained
3 tablespoons chopped fresh parsley
3 tablespoons minced green onions
3 cloves garlic, minced
1 teaspoon sugar
3/4 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 (8 ounce) package Cheddar cheese
1 (8 ounce) package cream cheese, cold

DIRECTIONS:
In a jar with a tight fitting lid, combine the olive oil, wine vinegar, pimento, parsley, green onion, garlic, sugar, basil, salt and pepper. Shake vigorously to blend. Set aside.
Cut the block of Cheddar cheese in half lengthwise. Cut crosswise into 1/4 inch slices to form squares. Repeat with cream cheese. Arrange cheese squares alternately in a shallow baking dish with slices standing on edge. You can arrange in a single long row, or 2 parallel rows depending on the size of your dish. Pour the marinade from the jar over the cheese slices, cover and refrigerate for at least 6 hours, or overnight.
To serve, remove slices to a serving platter so they are still arranged in an alternating pattern. Spoon some of the extra marinade over the cheese, and serve with crackers.

I am creating... This week I need to finish my lessons plans for Timothy Ministry's this fall. I am teaching STOW 4 to 3rd/4th graders and American Girl: Kit.



I am going... To take the girls to piano @ 10:00 today and back home to finish up school.

I am reading... Homeschooling with a . . . Meek and Quite Spirit. Found this book used this spring and have always wanted to read it.

I am hoping... To have a productive week @ home.

I am hearing... June Bug (English bulldog snore ZZZ)

Around the house... finish the laundry, clean out the truck.


One of my favorite things... I love to cook! The next two weeks I am trying different recipes using shrimp and fish. The girls enjoy the shrimp, but they will pass on the fish.


A Few Plans For The Rest Of The Week:


  • Meet & Share on Wednesday. The girls love visiting with their friends. Last month and this month we have been just been swimming. In Aug. we will go back to sharing what each of us are studying in school. We do this monthly, great fellowship for both the children and the mom's :)!

  • Thursday is Tom's birthday, the girls will back his cake and I am writing him a letter from my heart.

How I love to bake, just made a whole wheat yellow with a sucanat icing (so it tasted like caramel) for my twin sisters this weekend.
