BFS Assignment #105 - M’m M’m Good


Assignment: Post your favorite fall recipe/recipes to share.

No-Fuss Potato Soup
(Serves 8-10)



6 C cubed and peeled potatoes (I used can potatoes)
5 C Chicken Broth
2 C chopped onion
1/2 C thinly sliced carrots
1/2 C chopped celery
1/4 C butter or margarine
2 tsp. Salt
1/4 tsp. pepper
12-oz. can evaporated milk
3 Tbsp. chopped fresh parsley
3 Tbsp Bacon Bits



In a large slow cooker, combine all ingredients (except Bacon Bits). Cover and cook on high for 7 hours or until veggies are tender. Top with Bacon Bits and some chives before serving. Yum, Yum!!

Now this sounds good-I did the one Cindy Rushton has on her site, but these extra ingredients sound like they are the perfect addtions to making it special..thanks for posting!

This is the second potato soup recipe I've seen for this assignment, yours sounds a little easier, but longer time prep.. good for if you're well organized and thinking about dinner in the morning. I've been trying to use my crock pot more these days.
