Monday Meanderings


Bible Study & Devotions: The Girl's and I will continue with our James Study.Personally: Beth Moors new Bible Study: Stepping Up. I will do this M-F and on Saturday: Create in Me a Clean Heart by Dandelion Seeds.
To Do's:
  • Monday ~ Prepare Valentine's forValentine Party and make adult dessert for Tuesday
  • Tuesday ~ Valentine Party & Piano (no-Timothy this week due to the Real Evaangelism Conference)
  • Wednesday ~ Finish up plans for family Valentines Day.
  • Thursday ~ Make grocery list & neal planning for next 2 weeks
  • Friday ~ I am a "Cummunity Judge" for Speach & Debate for our regional NCFCA. Their will be students from Georgia, Florida, North Carolina and South Carolina. To find out more about NCFCA: http://www.ncfca.org/ After this we are going to COSTCO.

  • Tuesday ~ Bathroom's
  • Wednesday ~ Schoolroom Closet (did not get to this last week)
  • Thursday ~ Kitchen (Help Hubby with kitchen remodel . . . I did take before pictures to post with the pictures of the kitchen when it is done)
  • Friday ~ living room & laundry/IroningMonday ~ Laurndry & Ironing

Train them up:This month our focus is on "When God speaks to our heart." How to hear His voice and listen to what He said's.

Prayer Request & Praises: I started this 3 weeks ago and I pray all read it are blessed, so please check back on Tuesday on how to start preparing for the next school year. Menu Planing: We are remodeling our kitchen. This will most likely take two weeks or more. We are adding a back splash, new paint (walls & cabinets) and window curtains. I have to be creative with our cooking this week.
  • Monday ~ Taco Pie
  • Tuesday ~ Italian Fish (for me) & Hot Dogs for the girls
  • Wednesday ~ Tillapia w/Lemon Butter Sauce & rive/veggies
  • Thursday ~ Order out: Chinese Food
  • Friday ~ COSTCO Pizza
  • Saturday ~ Chicken Pot-Pie
  • Sunday ~ Daytona 5oo (we will have coffee table meal) This is just a bunch a finger foods that we eat at the coffee table as we watch the race.
Two Recipes to share taken from: Favorite The Costco Way
Sweet and Sour Pineapple Grilled Fish
2 teapoons peanut oil, plus more for grilling
2/4 cup each red and green bell pepper cut into 3/4-inch squares
3/4 cup coarsely chopped onion
1/2 teaspoon minced garlic
1/2 teaspoon minced fresh ginger
3/4 cup pineapple juice
1/4 cup plum sauce
1 tablespoon lemon juice
2 teaspoons cornstarch
1 1/2 cups Del Monte Golden Extra Sweet Pineapple chunks, drained
1 teaspoon grated lemon peel
4 tp 6-ounce fish fillets
Salt and pepper
1. Heat 2 teaspoons oil in a large nonstick skilet over medium-high heat. Add peppers, onion, garlic and ginger. Cook, stirring, until vegetables are just crisp-tender, about 5 minutes.
2. In a medium bowl, wisk together pineapple juice, plum sauce, lemon juice and cornstarch until sooth. Sir into the vegetable mixture. Bring to a boil, reduce heat and simmer, until thicken, about 3 minutes.
3. Stir in pineapple and lemmon peel; heat briefly.
4. Lightly brush fish on both sides with oil. Season to taste with salt and pepper. Cook fish in a preheated ridged grill through, about 8-10 minutes.
5. Serve sauce over fish with cooked rice, if desired. Make 4-6 servings (about 2 cups sauce).

Beef Stew from the Bayou

3 pounds boneless beef chuck, cubed

Salt and pepper

Hot pepper sauce

1/3 cup all-purpose flour

1/4 cup vegetable oil

1 large onion, diced

1 1/2 cups diced celery, including tops

8 garlic cloves, finely minced

Bay leaf

1 tablespoon Worcestershire sauce

1 quart low-sodium beef broth

1 pound carrots, cut into 3/4-inch slices (I used baby carrots)

3 pounds thin-skinned new potatoes, halved

1 cup cliced green onions

Cooked rice

1. Place beef in a large bowl and season to taste with salt, pepper and hot sauce. Coat meat well with flour.

2. In large Dutch oven, heat oil over medium-high heat. Add meat annd brown on all sides in a single layer, working in batches if needed. Remove meat and keep warm.

3. Add onions, celery and garlic to the pot. Saute' for 3-5 minutes, strring occasionally, until vegetables are soft.

4. Return beef to the Dutch oven and mix. Add bay leaf, Worcestershire sauce and stock, stirring and scraping the bottom of the pot to lossen meat/vegetables bits. Add carrots and potatoes and stir.

5. Bring to a boil, cover and reduce heat so the mixture simmers slowly for 1-1 1/2 hours, or until tender.

6. Add green onions and season to taste. Simmer for an additional 10 minutes. Serve over rice. Makes 6-8 servings.

Hi there! That beef stew does look yummy. I hope your week goes well. I had a little chuckle when I read the day where you will be a "community judge" with kids from all these states...and then we'll go to Costco. That's a Mom's day, isn't it lol? It's great. Have a blessed week. Julie
