Bible Study & Devotions: The Girl's and I will continue with our James Study.Personally: Beth Moors new Bible Study: Stepping Up. I will do this M-F and on Saturday: Create in Me a Clean Heart by Dandelion Seeds.
- Monday ~ Prepare Valentine's forValentine Party and make adult dessert for Tuesday
- Tuesday ~ Valentine Party & Piano (no-Timothy this week due to the Real Evaangelism Conference)
- Wednesday ~ Finish up plans for family Valentines Day.
- Thursday ~ Make grocery list & neal planning for next 2 weeks
- Friday ~ I am a "Cummunity Judge" for Speach & Debate for our regional NCFCA. Their will be students from Georgia, Florida, North Carolina and South Carolina. To find out more about NCFCA: http://www.ncfca.org/ After this we are going to COSTCO.

Prayer Request & Praises: I started this 3 weeks ago and I pray all read it are blessed, so please check back on Tuesday on how to start preparing for the next school year. - Sunday ~ Daytona 5oo (we will have coffee table meal) This is just a bunch a finger foods that we eat at the coffee table as we watch the race.
Beef Stew from the Bayou
3 pounds boneless beef chuck, cubed
Salt and pepper
Hot pepper sauce
1/3 cup all-purpose flour
1/4 cup vegetable oil
1 large onion, diced
1 1/2 cups diced celery, including tops
8 garlic cloves, finely minced
Bay leaf
1 tablespoon Worcestershire sauce
1 quart low-sodium beef broth
1 pound carrots, cut into 3/4-inch slices (I used baby carrots)
3 pounds thin-skinned new potatoes, halved
1 cup cliced green onions
Cooked rice
1. Place beef in a large bowl and season to taste with salt, pepper and hot sauce. Coat meat well with flour.
2. In large Dutch oven, heat oil over medium-high heat. Add meat annd brown on all sides in a single layer, working in batches if needed. Remove meat and keep warm.
3. Add onions, celery and garlic to the pot. Saute' for 3-5 minutes, strring occasionally, until vegetables are soft.
4. Return beef to the Dutch oven and mix. Add bay leaf, Worcestershire sauce and stock, stirring and scraping the bottom of the pot to lossen meat/vegetables bits. Add carrots and potatoes and stir.
5. Bring to a boil, cover and reduce heat so the mixture simmers slowly for 1-1 1/2 hours, or until tender.
6. Add green onions and season to taste. Simmer for an additional 10 minutes. Serve over rice. Makes 6-8 servings.
